Fill a pot ( The size according to the amount of pig trotters you use) halfway with water and wait for it to boil. Once it boils, place all of the Pig Trotters in and the boiling should stop. Once the water boils again, take the Pig Trotters out and dry.
Add all the ingredients from Ingredient #2 except the Ankle Sauce into a Wok and stir-fry for 1 minute.
Add the Ankle Sauce and stir-fry for 1 minute.
Add Pig Trotters and stir-fry for 3 minutes. Add Pig Trotters and stir-fry for 3 minutes.
Add all ingredients from Ingredient #3 and mix well.
Transfer the Pig Trotters and the rest of the Ingredients from the Wok into a bowl.
Place a stander in a high pressure cooker and place the bowl on it. Fill the High Pressure Cooker with a inch of water.
Cook for 30 minutes and after this, wait for the pressure in the cooker to lower. This may take 5 - 10 minutes at most.
Open High Preesure Cooker and take the Pig Trotters out.
Place Pig Trotters into a serving bowl and serve with rice. Enjoy!
